Save the extra syrup to use in breakfast cocktails, desserts, or to make another batch of bikinis.

Bikini Recipe

Makes enough for 10 people

For the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Cocktail (produces 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Directions

To prepare the Citrus Syrup: Combine the listed ingredients inside a saucepan, heat until it reaches a light boil, agitating until the sugar dissolves. After that, take off the burner allowing it to reach room temperature completely. Decant to a sterilised bottle, close it keeping it chilled, where it will keep for about four weeks.

Preparing the Premix: Combine all the spirits and syrup in a big jug, allow it to infuse for 60 minutes, then pass it through preferably using muslin, making it completely strained.

To serve: Add 85ml of the cocktail base into a stirring glass containing ice, and stir gently for a minute until cold. Strain into a frosted cocktail glass or similar, garnish with a few cranberries and finish by giving it a brief mist of the essential oil over the drink.
